The Intersection of Food, Sustainability, Justice, and Health: Interview with Jenny Breen
Jenny Breen has been a professional chef and advocate for sustainable food systems and food justice, and has worked directly with farmers and producers in Minnesota since the mid-1980’s. She was co-owner of Good Life Cafe and Catering, a sustainable food business from 1996 to 2013. She is a 2009 Archibald Bush Foundation Leadership Fellow and completed her Master of Public Health degree in Nutrition at the University of Minnesota in 2011 while working to build strong networks within health and food systems for greater access to food, support for sustainable farming, and understanding of cooking as a health strategy. Her first cookbook, Cooking up the Good Life, emphasizes local, seasonal whole foods cooking for families and was released in April of 2011 from the University of Minnesota Press.
Chef Breen currently teaches three courses at the University of Minnesota, including an online undergraduate course called "Food Choices: Healing the Earth, Healing Ourselves" and a graduate level cooking course for health professional students called “Food Matters: Cook Like Your Life Depends on It,” both through the Bakken Center For Spirituality and Healing. She also teaches an undergraduate nutrition cooking class, “A Food Systems Approach to Cooking” in the College of Food, Agricultural, and Natural Resource Sciences (CFANS). She contracts as a Public Health culinary nutrition educator with local health departments, clinical organizations, school districts and nonprofit food and farming organizations.

Kate is a plant lover, folk herbalist, herb gardener, medicine maker, botanical perfumer, flower essence practitioner, and a devoted believer in the cosmic healing powers of our wild allies. Body Image, Yoga, and Femininity: Interview with Erica Mather
Erica Mather was born in Madison, Wisconsin in 1975, and grew up swimming, playing the piano, and reading books before, during, and after school. When her father died at the young age of 56 (she, 23), Erica realized that life is short and it’s best to quickly get on with the business of living it in alignment with what matters to us most. She quit her day job and doubled down on playing the piano professionally, gigging, writing, teaching, and self-producing two jazz-inspired albums, Borderlands (1999), and The Millennium Song Cycle (2001). In 2002 Erica was voted “Madison’s Favorite Jazz Artist” in the 2002 Isthmus Reader’s Poll. She served on the Mayor’s Arts Advisory Board. You can hear her music on SoundCloud. At the age of 26, Erica began experiencing adult onset migraines, going overnight from “healthy” to “gravely ill.” On a quest for relief she discovered Forrest Yoga.
In 2004 moved to New York City to commence Ph.D. studies in Ethnomusicology at Columbia University. After earning her Masters Degree in 2006 she took a medical leave of absence, trying to get a handle on worsening migraines. In this quest, during the summer of 2006 Erica enrolled in and completed the month-long, immersive Forrest Yoga 200-hour Teacher Training with Ana Forrest, in Boston, Massachusetts. Returning to New York City, Erica began what has been her profession of the last 15 years. Fortifying her career change with retail work, Erica began growing a reputation throughout New York City as a gifted teacher, capable of high-level, physically, intellectually, and emotionally engaging education, presented in a mixed level classroom. It is in this environment of practicing and teaching yoga that Erica gestated the information culminating in her first book, Your Body, Your Best Friend: End the Confidence Crushing Pursuit of Unrealistic Beauty Standards and Embrace Your True Power (New Harbinger, April 2020). Using her own illness and body image challenges, the teachings of embodiment intrinsic to Forrest Yoga, and her experience working in private practice with people’s wounded and ill bodies, Erica has developed a teaching style and message that encourages us to begin to build a relationship with the body, in service of our health, and also in the quest to discover our life’s work, or dharma. In 2009, Erica was hand-selected by Ana Forrest to become a lineage-holder (called “a Guardian”) in the Forrest Yoga system. Amanda H. Corbett, PharmD, BCPS, FCCP, FAIHM is the Assistant Dean for Professional Curriculum, the Associate Director of Global Engagement, and Clinical Associate Professor at the University of North Carolina Eshelman School of Pharmacy and the Global Pharmacology Coordinator for the UNC Institute for Global Health and Infectious Diseases. Dr. Corbett is board certified in pharmacotherapy and is a fellow of the American College of Clinical Pharmacy and the Academy of Integrative Health and Medicine.
She received a B.S. in Chemistry at the University of North Carolina in 1994 and a Doctor of Pharmacy degree from Campbell University in 1999. An Eye for Nutrition: Interview with Rudrani Banik, MD
Rudrani Banik, MD, is a Board-certified Ophthalmologist and fellowship-trained Neuro-Ophthalmologist. She has expertise in a wide range of conditions affecting vision including: dry eye, digital eye strain, blue light, cataracts, glaucoma, and macular degeneration. She performs cataract and laser surgeries and has extensive experience with medical and cosmetic Botox.
As a Neuro-Ophthalmologist, Dr. Banik also manages migraine, headache, double vision, optic neuritis, optic neuropathy, swelling of the optic nerve, double vision, ocular myasthenia gravis, brain tumors or stroke affecting vision, idiopathic intracranial hypertension (pseudotumor cerebri), unexplained visual loss, and facial spasms.
In addition, Dr. Banik has specialized training in Functional Medicine with Institute for Functional Medicine. She applies principles of nutrition, combined with supplements, essential oils, and lifestyle strategies for the benefit of her patients. She has authored numerous articles and has presented at national and international meetings. She is a member of the American Board of Ophthalmology's Exam Development Committee and helps to set the standards for Board certification in her field.

She received a B.S. in Chemistry at the University of North Carolina in 1994 and a Doctor of Pharmacy degree from Campbell University in 1999. Subsequently, she completed a Pharmacy Practice Residency at Wake Forest University Baptist Medical Center and ID Specialty Residency and HIV Pharmacology Fellowship at the University of North Carolina. At completion of her training in 2003, she joined the faculty at the UNC Eshleman School of Pharmacy. Synegration is a word coined by my son that reflects this philosophy of using modalities from the 'East' and the 'West' to maximize health and healing. Synegration is the blending of two words; synergy and integration. Synergy is defined as the interaction of elements that when combined produce a total effect that is greater than the sum of the individual elements while integrations is defined as an act of combining into an integral whole. These concepts when combined together is something new and powerful.
I offer Reiki to members of the Dan Abraham Healthy Living Center. I also partner with Northgate Chiropractic Clinic and Lilac Wellness Center to offer coaching and energy therapies as a alternative healing and/or wellness option. I do this through Reiki, Chakra clearing and balancing, and meditation coaching. I also offer coaching on techniques to build mindfulness and resilience to reduce stress, anxiety, and burnout.
These therapies can be used alone or combined with other therapies to bring more energy into the body. The body knows where to best utilize this renewed energy and channels it for that purpose; healing when ill, clearing the mind to see more clearly, and/or revitalizing the spirit. Healing Touch: Interview with Sarah Stinson, M.S., FAIHM
Sarah Stinson is a leader and practitioner in the field of holistic health and healing. After graduating with a masters in community counseling she started working with those affected by eating disorders both in the area of prevention and treatment. In the beginning of her career she was an activist facilitating a group called GO GIRLS!TM which stands for Giving Our Girls(and Guys) Inspiration and Resources for Lasting Self-Esteem. This journey led her to become the Creative Energy Officer (CEO) for a non-profit called Higherself whose mission was to "strengthen the spirit of each girl to celebrate who she is and what she can do." In addition she lobbied on Capitol Hill in support of an eating disorders bill, appeared on a national talk show, presented at various national conferences and brought the GO GIRLS! to Fiji to present on the impact of the media on body image and self-esteem. She was the recipient of the Outstanding Service Award (Eating Disorders Awareness and Prevention), Lori Irving Award for Excellence (National Eating Disorders Association), the Whitaker Award (Minnesota Coalition of Adolescent Females), and the Westin Family Award for Activism (National Eating Disorders Association). She was active as a member of the girlsBEST Advisory Board for the Women's Foundation of Minnesota and past member and president of the board of directors for the Girls Coalition of MN.

Steph grew up on her family's cheese factory and her only dream was to do that, she left for school with the expectation of returning to the family business but once she was gone, they sold it. Integrative Neurology: Interview with Dr. Marie Collier Part 2
Dr. Collier is a Board-certified neurologist and epileptologist as well as an integrative medicine doctor who practices in Grand Junction, CO. She completed her medical school education at the University of Texas Health Science Center San Antonio in 2009. She then went on to finish her residency in neurology and fellowship in neurophysiology with a focus on epilepsy at the University of Utah. Since graduating from fellowship, she moved to Montana and was the first board-certified epileptologist for the state of Montana. She then moved to Grand Junction, Colorado in 2016 to build a first of it's kind epilepsy program for the Western Slope. She is the medical director of a NAEC (National Association of Epilepsy Centers) level 3 certified epilepsy monitoring unit providing comprehensive epilepsy care to patients with epilepsy in a rural setting.
In 2018, she graduated from the AIHM (Academy of Integrative Health and Medicine) integrative medicine fellowship with honors. She also is a graduate of the American Academy of Neurology's Live Well Lead Well leadership program creating a program to address physician wellness.
She is also a 200 hour registered yoga teacher (RYT) and teaches yoga at national conferences including the American Academy of Neurology's annual conference. She will be teaching again this May in Philidelphia. She has been studying yoga since the age of 17, when she graduated from high school and spent the summer in Espanola, NM studying under the guidance of Yogi Bhajan who bestowed upon her the spiritual name Guru Prem Kaur. Since that time she has studied yoga in Rishikesh, India and obtained her RYT through the Baptiste Institute. She also recently completed Baptiste Level 1 in Tulum, Mexico with Baron Baptiste and will be attending the Fit to Lead leadership program next month.
Dr. Collier believes that yoga can help patients with neurological disorders on many levels and recommends yoga to her patients for a number of conditions. Neurological disease is complex, difficult to treat and frequently requires a multidisciplinary approach. This is what drove her to explore yoga, mindfulness, meditation as well as functional and integrative medicine to help patients create a wellness toolkit in their journey to health.

Dr. Ott lives and has been practicing in Wabasha MN for the last 4 years at Ott Family Chiropractic & Wellness Clinic. She spends the majority of her free time playing chase and wrestling with her two year old son and cooking with her husband. One of her favorite things to do is be outside on a hot summer day reading a good book!
This is a fantastic interview to start off Season 2 of Nourish + Shine. I had so much fun sitting down with Dr. Ott for this interview in person. As we talked I could see her face lighting up. She is so passionate, knowledgeable and I love that she's an entrepreneur!

She manages the Wabasha Farmers Market, is on the board for Lake Pepin Local Foods, created the Wabasha Food Access Network, is the SE Regional coordinator for the MN Food Charter, is the Vice President of the MN Farmers Market Association and she is a Food Safety trainer for FSMA the Food Safety Modernization Act.
