1) Instagram is good for feedback
2) Making Espresso is hard
3) Data AND Taste should complement each other in seeking ways to improve the craft
4) Even bad pulls from a data standpoint can still taste yummy
5) I need an espresso-specific grinder
6) Espresso-specific grinders are expensive, so maybe I need to just get creative
7) Distributing the grounds evenly before tamping is so important and takes practice
8) Crema is important but not the most important sign of a good espresso
9) It is humbling but helpful to put your failures out there and ask for help!

Thanks to Jonathan Pascual, the owner of Taproom Coffee & Beer in Atlanta GA, we'll spend most of the episode digging in to the all-important "HOW" question. My biggest takeaways from Jonathan's advice were:
--> Get rid of clumps!
--> Even distribution of grounds in the portafilter is probably the #1 most important technique
--> Learn the "palm tap" technique (see Clive Coffee article!)
--> Don't overthink the Tamp

Katie and I went to the Coffee Farmer Caravan event for date night this week at East Pole Coffee Company where we got to meet and learn directly from Colombian coffee growers and exporters. It was such a fun and educational night and we wanted to hop on the microphone to share some of our takeaways with you while the learning was still fresh. Although this season of the podcast is focused on Home Coffee Roasting, learning more about what it takes to grow and process coffee with excellence definitely helps us appreciate roasting green coffee at an even greater level!
Big Takeaway: if you can get your hands on some Gesha coffee, DO IT. It's such a crazy good unique experience.

- the country of Colombia is responsible for ~30% of the world's supply of coffee? There are approximately 540,000 coffee farms across the country which produce and export over 14 million bags of coffee per year (1 bag = 60kg)
- this may be subjective, but according to Banexport they believe 50% of the flavor of coffee is a result of the growing altitude and the variety of the coffee tree. The other 50% of the flavor comes from the processing method (washing, drying, fermenting, etc) after picking the coffee off the tree.
- there are dozens of varieties of coffee trees which all produce unique flavors in the coffee beans. The most-sought-after variety of coffee today is the Gesha tree, which was discovered first in Gesha, Ethiopia but can also be grown successfully in Panama, Tanzania, Costa Rica, Peru, and of course COLOMBIA!

I'd never been through an experience like this before. It was new. It was objective. It was educational. It was a little nerve-racking. It smelled GREAT.

Ride along with me and my neighbor Robby as we roast a batch of green coffee from start to finish on my back porch with my Hottop Roaster. Robby is a "coffee person" but is new to coffee roasting so his insights, takeaways and questions are On Point for anyone who is curious about roasting their own coffee.
My Home Roasting Process (as played out in the episode)
1) Preheat ("charge") roaster to 420 degrees (internal temp of roaster)
2) Set final roasting temperature at 374 degrees (temp of bean)
3) Once preheated, add 300g green coffee into roaster (full batch)
4) Turn fan to 100% for 60 seconds once green coffee temp begins to "rise"
5) Reduce fan speed to 10%
6) When internal roaster temp reaches 400 degrees, reduce heat to 90% and increase fan speed to 20%
7) With every additional 10 degree increase in roaster temp, reduce heat by an additional 10% and increase fan speed by an additional 10%
8) Eject beans when bean temperature reaches 374 degrees (assuming first crack is complete and bean color is what I want)
9) Allow to cool in cooling tray for 5 minutes
10) Get rid of as much chaff as possible
11) Lay coffee beans out on cookie sheet for an additional 30-60 minutes
12) Put roasted coffee in mason jar or sealable bag (with one-way release valve)
13) Wait 3-4 days before brewing!

Are you a French Press kind of coffee person? Or maybe you're looking to branch out and try a new brewing method? Immersion brewing gives you a different take on your morning cup of coffee and there are several key tips in this episode to help you make it taste better.
When my good buddy Jordan Lee makes coffee at home, it's all about the Full Immersion brewing method for him. In this episode, Jordan and I brew some coffee on my back porch using his Clever brewing device and talk about the process and delicious outcome of steeping coffee grounds and hot water together.
We are using the Clever in this episode, but the process is basically identical if you're going the French Press route.
If you want to try your hand at Full Immersion Brewing, here's the equipment you'll need to get started. Have fun!
