I got to spend a lunch break with Chef Mike Rumplik, Cara Oates-Rumplik, and Christine Gonzalez, the owners of The Nauti Lobstah - a family and friend-owned restaurant serving up fresh New England Seafood and Southern style Catfish and prime steaks in a family-friendly setting.
I visited The Nauti Lobstah in Apopka, FL, and sat down with Chef Mike, Cara, and Christine to talk about how they decided to start the Nauti Lobstah. We spoke about the transition from working in 5 Star Restaurants and Resorts to opening their own local spot. Learn how they found their location, discovered Apopka and how they incorporated their New England seafood menu into the The Catfish Place classics. We spoke about the importance of guest service matching their high quality fresh Maine Lobster, New England Seafood, fish & premium steaks.
I also spoke with them about what they do in their "off" hours as well as what advice they would give someone if they wanted to start their own business.

Maffrey's- Jeff Starks from traveling and finding unusual items with great stories that brought good to the world, they decided to share it with others by bringing it all together in one store to buy.
I got to spend a lunch break with Jeff Starks, the Proprietor and Founder of Maffrey's - an Orlando shop located in Ivanhoe Village curating interesting, unique, and fun products that are connected to a good story.
I spoke to Jeff about how he came up with the idea of wanting to open up a shop. We spoke about what the store was initially and how he saw his customers and pivoted and grew. Jeff spoke about how he speaks and journals things into existence and gratitude.
It was a great conversation talking about what he looks for when he is looking for products, as well as, also communicating with other local shops and the importance of sharing your story.

Bien Fuegos BBQ- Derek Pierson took his love of BBQ and decided to do show love to some of his Cuban roots along with Texas style BBQ to create sandwiches
I got to spend a lunch break with Derek Pierson, the Owner, and Local Pitmaster behind Bien Fuegos BBQ, an Orlando native bringing a Cuban twist to Texas-style BBQ right here in the city.
Derek and I spoke about his love for BBQ and why Texas BBQ. We spoke about how he started to do Pop-ups and find places to be able to sell. We spoke about learning the craft of BBQ and when he decided it was time to move from feeding just friends and family and feeding the masses.
We spoke about the difficulties of working full-time and also smoking meats and prepping for events. We spoke about the BBQ community and also the importance of not just having great food when you are a small popup business. Derek also speaks about having to get out of his comfort zone as well and having to wear multiple hats.

Otus Coffee - Glen Turchin took his love of coffee and started roasting in his garage and quickly fell in love with the craft. Now he's offering his coffee to shops, restaurants and cosumers to enjoy.
I got to spend a lunch break with Glen Turchin, Owner and Roaster at Otus Coffee a family-run coffee roasting business that started from their garage. Glen is providing approachability in Specialty Coffee. Glen and I spoke about his love for coffee and how he got into it. We spoke about him starting to roast coffee with a popcorn popper in his kitchen. How he was so into it he bought a commercial coffee roaster in his garage and got into roasting coffee full-time. We spoke about the competitiveness of the coffee business and also about the coffee business in general. Glen and I spoke about Carson's Coffee Corner and how the business has grown and his advice on starting something. O-Town Compost- Charlie Pioli saw an issue with local waste management and created a community composting model here in Orlando to help give others a sustainable option to recycling organic waste.
I got to spend a lunch break with Charlie Pioli, who comes from a career in solid waste & recycling consulting and has witnessed the egregious waste being generated and poorly managed around the country firsthand. Spurred to action, he started O-Town Compost- Orlando’s community composter to give his neighbors a sustainable option to recycle their food scraps.
Charlie and I spoke about how he started O-Town Compost- and the issues Central Florida has with our current landfill. We spoke about him starting a subscription service and the work on educating the community. We talked about the importance of mentorship and collaboration. Charlie discussed how he started and how the business has grown and his advice on starting something.

Justin and I spoke about how he got into doing Murals around the country and how he started working on his comics- Very Near Mint, The Hot Dogger, and The Unbelievable Floridians. As well as about his favorite X-Men and what inspires his art.

I got to spend a lunch break with Casey Webb, actor, comedian, and host of Man V Food, a culinary tv tour across America, checking out the best diners, looking for great food, and tackling the nation's largest and most fiery eating challenges.
Casey and I spoke about how he got the opportunity to be the host of Man vs Food and how the show works as far as production and time spent. We spoke about the positive effects the show has on the small businesses being showcased. Casey spoke about the benefits of having a support system. How relationships lead to other opportunities. I asked him about dealing with failure especially when you are auditioning. We discussed some other opportunities he has and how it is to be hosting Man vs Food for over 7 years and his fav city and also what city most surprised him. Lastly, we also spoke about our collaboration together on Taylor Ham Pork Roll t-shirt we worked on with Blair Campbell.

Dark Cycle Clothing- Adam and Coryn Enfinger started a clothing brand based on quirky animals on bikes - 13 yrs later they are printing, packing and shipping their shirts to every corner of the world.
I got to spend a lunch break with Adam and Coryn Enfinger, owners of Dark Cycle Clothing, a clothing brand based out of Tampa, FL inspired by Adam thinking up quirky animals on bike designs while making his 17-mile bike ride to work. Eventually, he screenprinted the designs on some extra t-shirts and they generated quite a bit of interest every time they were worn. Now with over 100k happy customers and with their shirts in over 100 small shops worldwide, each shirt is still hand screen printed with care by Adam. Dark Cycle Clothing's mission is to provide ethical and quality clothing while promoting alternative transportation and raising animal awareness.
I spoke to Adam and Coryn about how they came up with the name and the concept. Coryn told me about they started with an Etsy shop and how it blew up and then they did a .com shop. We spoke about how they handle inventory when doing Wholesale, Events, Etsy, and DarkCycleClothing.com. Adam spoke about how they hand-print each shirt. We spoke about how they balance their business and also caring for their 8 children. We spoke about what it takes to be a successful clothing brand, as well as, discussed how many different animals they have created on bikes. Was great to also hear about how they discussed some of their previous designs coming back.

I spoke to Nemo about how he came up with the idea to start Foolies. We spoke about how the past 13 years he has been such an advocate for strong black women and the women that inspire him. We discussed being inspirational for so many and why he does that. Nemo spoke about how folks need to become OK with being the number 2 person on their journey and to help and serve others along the way. Our time will come just be ready for it. We spoke about the losses and the realities of being a brand owner vs what you see on social. I got to spend a lunch break with Steve Raggiani, co-founder of the 8it App, the simplest way to find the best food recommendations, pop-ups, dish drops & collabs in NYC. I spoke to Steve about how he came up with the idea to start the app, and how the name came about. Steve shared how the app shares 8-word reviews for the food you want to eat. We spoke about how the app has evolved and the importance of building a community and collaboration with some of NY's finest chefs and small businesses. Steve shared some of the things that you deal with when creating an app. Steve and I also spoke about how we met because of Chef Carl Ruiz and the feedback he provided Steve about the 8it app. We spoke about he interacts with app users to get an idea of how they use the app. We discussed how the app is growing and expanding past NY. I think this app will be big and can't wait for it to grow.

Tao Te Cheese- Brian and Cindy Johnson quit their corporate jobs and went with the way of the cheese- opening up a Grilled Cheese truck and selling that cheesy melty goodness for the past 6 years.
I got to spend a lunch break with Brian and Cindy Johnson, are the owners of Tao Te Cheese (pronounced Dow De Cheese) and they are sharing the love of creative grilled cheese sandwiches with Central Floridians.
I spoke to them how they got the name for the their food truck/trailer, as well as, why grilled cheese sandwiches. We discussed some of the misconceptions of owning a food truck along with the rewards of it. We spoke about what made them decide to quit corporate life and jump into the cheesy life of a running a small business these past 6 years. We spoke about their Why, along with what else they do besides selling grilled cheese.
Was a great conversation and I enjoyed the grilled cheese sandwich making tips - I learned along the way.

Fur Face Boy- Ha Mai started his clothing brand as a creative outlet in 2009 after a bad breakup. 14 yrs later the brand has reflected his journey in life and continues to be his creative outlet.
I got to spend a lunch break with Ha Mai, the mind, soul, and heart behind the brand Fur Face Boy. A highly attentive-to-detail T-shirt brand representing Ha's loves, pop culture, and all of the quirkiness in between!
I spoke to Ha about how Fur Face Boy came about and why he started it back in 2009. We spoke about how he came up with the name. We spoke about the journey the brand and he has made these past 14 years and the different versions of the brand. We spoke about the difference between when he started (MySpace and the beginning of the Twitter era and social) to bring the brand back now. We spoke about the advice he gave me in 2010 and how it still translates now. Was awesome to catch up with Ha and great to see Fur Face Boy.

I spoke to Ian about how they started, how they built their business from a pop-up tent to a food trailer to opening up 2 locations (UCF and the Milk District). We discussed how they pivoted and moved locations from their original spot to into the Local Butcher to now within Foxtail and the Courtesy-you could call it the Swine House. I got to spend a lunch break with Helen Miranda, an Orlando Creative who runs Cover Yo Space Gurl - Lifestyle goods to brighten your space; that is cute and punny and art.
I spoke to Helen about how she originally started her brand as Cover Yo Face Gurl - making masks with her mom during the pandemic. She then decided to pivot and start showing offer her art and morphed her business into Cover Yo Space Gurl. We spoke about that transition; how she hand paints and puts her art and designs out there. She shared some tips and advice she has gotten along the way. As well as, she has provided me with some great suggestions for stop motion and time-lapses and I may have gone on a rant at the very end of the show. A great time was spent and another fun show was recorded.

Red Panda Noodle - Eliot Hillis believes noodles make life better and he along with Seth Parker and Jen Silva are popping up serving up hand pulled noodle dishes from around the world.
I got to spend a lunch break with Eliot Hillis, the Culinary director/co-owner of Red Panda Noodle - a pop-up noodle concept the latest brainchild of Eliot and Seth Parker, where they along with Jen Silva believe handmade and pulled Noodles make life better by serving up noodle dishes from around the world.
I spoke to Eliot about how they came up with the concept of Red Panda Noodle, where the name came from; how he got into the culinary world; I asked him for culinary advice/tips on making sandwiches and even cooking up noodles. We talked about his love of Noodles and how this was something over 6 years in the making in various iterations and their love for Central Florida and what they'd love to leave as a culinary legacy- as well as spoke about what advice he'd give people starting out.
