The Cocktail Guru's chat with Christopher Pellegrini, founder of Honkaku Spirits, and learn how an American ended up founding a Japanese Spirits company. Shortly after Christopher moved to Japan, he became obsessed with shochu. So much so that he opened his own company in March of 2020. Chris explains to the Gurus how shochu takes on the flavor of the product which was brewed; ie sweet potato shochu tastes of sweet potatoes, barley tastes of barley etc. Additionally, they are relatively low ABV which makes them easy to drink. Tim Master has more than 20 years’ experience in the hospitality and beverage industry. Currently the Senior Director of Spirits at Frederick Wildman & Sons, he oversees numerous brands, with emphasis on industry staple Chartreuse Liqueur. Tim’s skills and experience were honed in London, New York, and his hometown of Philadelphia, where he worked behind the stick at some of the top restaurant bars in these cities. After a career in bartending, Tim began his new journey of working with brands by representing Plymouth Gin and Absolut Vodka, where he remained for six years before moving to Wildman.
In his travels throughout the US and Europe, Tim was mentored by some of the industry’s top professionals and now enjoys the opportunity to enlighten and educate his industry peers. In 2006, he was fortunate to be in the first graduating class of Beverage Alcohol Resource's now-renowned training program, which allowed him to further fine-tune his skills.
While drinking his way across the country, Tim shares his knowledge with local media and industry members in each city he visits.

With over 15 years' experience in the service industry, from Boston to Los Angeles and beyond, Mia Mastroianni became one of the founding bartenders of Soho House West Hollywood; the private members-only club where she remained a well-respected and oft-requested mixologist for the who's who of Hollywood until 2016. Known for her stature and sassy fun attitude, “Tall Mia” has also opened Soho House locations in Miami Beach and Toronto, training their respective bar staffs on delivering the highest quality service, implementing proper technique, and executing amazing cocktails. Her expertise led her casting as an expert mixologist on the highly-rated TV show Bar Rescue, now featured in more than 30 episodes.
With a background in theater and a BFA from The Conservatory at The University of Miami, Mia is not camera-shy. She stays current with industry and consumer trends by attending and speaking at various seminars and conferences and continues her education in the spirits industry by visiting distilleries both locally and internationally.
Per Mia: "I LOVE TO TRAVEL. I can dork out on ice for as long as you give me. I love a good 10-second dance break behind a bar. The Original Farmer's Market in Los Angeles is my "Happy Place." Proper bar technique makes me happy. Prior to COVID-19, while dining in restaurants, my non-industry friends made a rule that I have to sit with my back to the bar. Otherwise, I'll zone out and spend the evening watching the bartenders. I love to learn and appreciate the craft and art of cocktails, along with exploring the deep history behind them."

Michael Jonathan Zegen is an American actor, best known for his roles on the television series Rescue Me, Boardwalk Empire, and The Marvelous Mrs. Maisel. Zegen was born to a teacher mother and lawyer father and lived in Glen Rock, New Jersey, before moving to nearby Ridgewood when he was five. He has two brothers. His mother was born in Austria, in a displaced persons camp, and his maternal grandparents were Holocaust survivors from Ukraine and Poland. He attended Ridgewood High School, where he was active in the school's theater program. Zegen is a 2001 graduate of Skidmore College.
His role on Rescue Me began as a recurring character in seasons 1–3, playing the nephew of series lead Tommy Gavin (Denis Leary). In seasons 5–6, he joined the principal cast when his character began probationary firefighter school to become a firefighter. In 2010, Zegen was cast as gangster Bugsy Siegel for the second, third, and fifth seasons of the HBO series Boardwalk Empire. In 2011, Zegen, along with James Ransone, was cast in supporting roles in the HBO comedy series How To Make It In America. In mid-2011, Zegen was cast in a recurring guest role in the second season of the AMC series The Walking Dead. In 2014 he created the role of Liam off-Broadway in the dark comedy Bad Jews. Since 2017, Zegen has portrayed Joel Maisel in The Marvelous Mrs. Maisel on Amazon Prime. For that role, he has won two Outstanding Performance by an Ensemble in a Comedy Series awards from the Screen Actors Guild.
